Vegan Recipes For Thanksgiving

Thanksgiving is a big festival in United States. Thanksgiving is all about good food, family and friends. From couple of centuries, Thanksgiving is celebrated in United States . Traditionally, Americans eat "Roast Turkey" for Thanksgiving...

Times are changing, and thousands of Americans relish delicious and colorful vegan fare (plant-based food) on Thanksgiving. Many vegans will enjoy "Tofurky", made with tofu and seitan( made from wheat) during Thanksgiving dinner . This year you can get amazing vegan food in Whole Foods Market . Mustard glazed cauliflower, lentil-mushroom stuffing , sauerkraut-roasted rainbow carrots,  and chocolate toffee miniature cake are some of the mouth-watering vegan items in Whole Foods Market during Thanksgiving week.

I'm planning to make yummy food for my family . I will make masala dosa( rice and lentil crepe ), coconut chutney , potato palya (spicy potato salad ), channa masala ( garbanzo beans infused with spicy Indian masala), jeera rice (cumin-flavored rice) , and carrot halwa(grated carrot cooked in homemade almond milk and vegan sugar)

Many people assume that thriving on vegan diet is expensive. With some planning, it is very easy to thrive on vegan diet.  PETA (People for the Ethical Treatment of Animals) is an amazing organization for protect innocent animals. I think PETA has played a pivotal role in convincing people to thrive on plant-based diet (vegan)...

Today, we don't see elephants and lions performing in circus, as PETA has worked for years to stop "animal cruelty". October 2 - World Farms Animals Day

Mahatma Gandhi is a legend. Today, Mahatma Gandhiji's principles and ideas is followed by millions of people in India and across the world. President Barack Obama and Martin Luther King Jr consider Mahatma Gandhi as their inspiration.

Mahatma Gandhi was born more than a century ago on October 2 in Gujarat, India. Mahatma Gandhi followed the principle of Nonviolence to free India from the British.

Mahatma Gandhi had great respect for animals. When he was a young adult, he took a vow not to consume cow's milk after he came to know the cruel procedure, Phooka or Doom Dev. Unfortunately, this cruel procedure still takes place in many countries. Mahatma Gandhi says, "The greatness of a nation can be judged by the way its animals are treated." I'm sure Gandhi would advocate vegan diet (cruel-free diet) if he were alive today...

To honor Mahatma Gandhi, October 2 is celebrated as World Farms Animal Day. Thousands of people are motivated to go vegan on this day.

Vegan Diet While Traveling

 Many vegetarians and vegans feel that it hard to find good plant-based food while traveling to new city or country. Before visiting any city or a country, I always make sure to visit the website HappyCow to get an idea about the vegetarian and vegan restaurants. And I always carry delicious dates, cashews and almonds.And I also have chutney pudi (Indian spice blend) to mix with oatmeal to make masala oatmeal!

Vegan Food in Yugal Kunj, Atlanta

Yugal Kunj is a Radha Krishna temple and community center in Atlanta. On last sunday of every month, Bhajans(devotional songs) entice people to fall in love with Lord Krishna. Recently, on sunday my family and I immensely enjoyed the divine Bhajans.  And the dinner prasad was so good...

Fresh vegetarian food is prepared daily at Yugal Kunj. My friend volunteers in the kitchen, and she showed in their huge cooking appliances and walk-in refrigerator. Yugal Kunj takes catering orders for vegetarian food. And most of the food items are vegan!

For appetizers - samosas, gobhi fry (cauliflower fritters), pakoras(garbanzo flour fritters). Delicious snacks such as bhel puri, pani puri , vada pav and pav bhaji will make people fall in love with Indian cuisine. Rajma (red kidney beans cooked in tomato sauce) and channa masala (garbanzo beans in tomato sauce) taste delicious with roti and paratha (flat breads) . They also have "vegan payasam " in their menu!

For kids, they have Bal Vihar, music classes, Yoga and also summer camp. They have also started Hindi classes . Here, kids learn about ancient Hindu customs, culture and philoshy. Adults have the oppurtunity to volunteer. You should visit Yugal Kunj if  you want to more about the oldest and eternal religion - Hinduism.

Sri Krishna Vilas in Cumming, Atlanta

If you are in Atlanta, and want to eat some good traditional south Indian food, then you should go to Sri Krishna Vilas in Cumming. Masala dosas, idli, rava doas, and vada is really good. In the afternoon, their Thali(variety of dishes including roti, rice, sambar, papad, side dishes and a sweet) is very popular.  I also like pooris, chole bhatara and vegetable biryani in this restaurant.

Sometimes, chats (Bombay street food) such as bhel puri, papdi chat and masala puri is also tasty and spicy here! Yesterday, I ate bhel puri, but it was so salty. I asked for sweet chutney, and it was sour! I guess this happens in most of the good restaurants...

In short, Sri Krisha Vilas is great for vegetarians and vegans. Please tell your friends and family in Atlanta to go to this restaurant even if they are not vegetarian or vegan

Protein-Rich Vegan Breakfast

Protein- rich vegan breakfast has been giving enormous energy and "guilt-free" happy feeling for millions of women across the world. I'm a vegan and start with my day with fruits. I usually eat mangoes, cherries or banana. Sometimes, I make yummy smoothies with banana, strawberries and few curry leaves or spinach leaves.  Around noon, I blend couple of dates, soaked almonds and walnuts to make nutritious drink. I sometimes add soaked cashew nuts, poppy seeds, chia seeds  or sesame seeds. This is so filling, and I don't feel like eating till six in the evening...

These days everyone I know is having green smoothie for breakfast! Greens such as spinach, kale , drumstick leaves, mint, cilantro or curry leaves is blended with fruits and dates. You should try green smoothie, if you have not yet tried it...

Raw Papaya Vegetarian Curry

A couple of days ago, I cooked raw papaya curry . It had pungent taste. I liked the raw papaya curry with brown rice. My MIL gave me the recipe, and she told me that her friend from Mysore gave the traditional recipe .

Raw papaya is very nutritious . South Indian cuisine has numerous tasty raw papaya recipes . Folks make salad, chutney , kootu(lentil based curry) and gojju (tamarind and coconut based curry).

Raw Papaya Gojju

Ingredients

2 cups of  chopped raw papaya (peel the green skin)
1/4 cup fresh coconut
 3 to 4 red chilies
1/2 spoon black mustard seeds
2 Tbsp tamarind juice
2 Tbsp jaggery
Asafoetida - a pinch

Method

1. Cook the raw papaya till soft, but not mushy.
2. Grind coconut , red chillies, mustard seeds , tamarind and jaggery to a coarse paste using 1/2 cup water.
3. Heat canola oil or cocnut oil, add mustard seeds and asafoetida. Now, add raw papaya and ground paste . Add one cup of water and salt. Let it boil for few minutes. Enjoy it with hot rice or Indian bread such chappathis.

I haven't been to Ahmedabad , but I have heard that it is a wonderful city for vegetarians and vegans. Gujarati cuisine is brimming with numerous vegetarian and vegan recipes. Gujarati cuisine is colorful and yummy. If you are interested in cooking Gujarati food, then youtube is awash with tasty vegan recipes. It is very easy to veganize Gujarati dishes. Just use olive oil or vegetable to replace ghee. In short, Ahmedabad is a mecca for vegetarians and vegans
